It’s my last day of work before a long 4-day Thanksgiving weekend and I am going stir crazy! I usually opt to take the Wednesday before Thanksgiving off but this year I couldn’t since I started a new job and didn’t have much time accumulated. 4:30 cannot come soon enough!
Over the weekend I prepared a couple of meals to make this week, which has made our week nights pretty stress free. I figured I should share the recipes and my thoughts on them.
Crockpot Vegetarian Curry
This recipe was simple to prepare and easy to just throw together in the crockpot on Sunday morning. And it made our apartment smell like curry. However, ours came out a little thinner (which you can tell when you compare my picture to the picture on the source’s website). Ours also came out a little…. bland. Which surprised me a lot since there were SO many spices in it. Maybe it was because it was so thin? We served it over quinoa which was a nice complement and a little less heavy than serving it over rice. The hubby said he thinks this one was a miss, but I’m not giving up hope yet. Next time I’ll figure out how to tweak the recipe a little bit to thicken it up.
Spinach Alfredo Lasagna

This came out super yummy and super cheesy. It was really really quick and easy to prepare as well. I made a few changes to the recipe that are worth noting. Since the hubby and I are vegetarians we left out the beef in the original recipe, so it was basically a spinach cheese lasagna. Second, I used the no-boil lasagna noodles, which saved me the step of having to boil them first, making it an even quicker preparation process. I also added a second jar of alfredo sauce on the top of it as suggested in the comments, it made it super creamy. The hubby said this one was a win so I think it’ll easily become part of our meal rotation. There’s a lot of opportunities to mix this recipe up too, even as a vegetarian – add other veggies like carrots or corn, use a meat substitute of some sort, etc.
I know I’ve posted this recipe before. But it was so easy to make and so easy to prep a few nights before. This time we swapped out the swiss cheese for cheddar which made them awesome! All we had to do last night was stick them in the oven and heat up a little tomato sauce to pour on top.
We have lots of leftovers in our fridge right now to keep us held over until tomorrow
Exercise this week has been good.
Monday I got in 30 minutes on the treadmill – it was rainy and dark and cold outside so I was so close to just bagging my run completely. But I reminded myself it was only 30 minutes, and I watched Rent while I ran making it go pretty fast and not boring. You never regret a work out!
Last night I went to heated yoga. It kicked my butt. There was a sub in for the normal instructor and she took us through some vinyasa poses. Typically the instructor does bikram so the change in focus really tired me out quickly. I usually feel pretty strong in down dog, but last night my shoulders were screaming. A change is good though I guess, it works different muscles.
Today is a rest day, and tomorrow I’ve got a 10k Turkey Trot.
