Fondant

The apartment is SO full of sweets right now! Silly Easter!! On Easter morning the hubby and I slept in (yay for getting the long run out of the way Saturday morning), and then we met up with my family for Easter brunch at a local restaurant. It was sooo yummy! Brunch consistent of little bits of the following: bagel with cream cheese, pound cake french toast, eggs benedict (a meat free version!), Caesar salad, garlic mashed potatoes, rigatoni with mushrooms and veggies, various cheeses, and chocolate fondue covered fruits, marshmallows and other goodies. everything was soooo awesome – especially the french toast! After brunch we went to my grandmas to show her our wedding dvd for a few hours. Naturally when we left she gave us a bazillion more sweets – most of which went with me to work this morning! haha.

Today it was back to the grind. Work followed by some arms n abs at home. Dinner was vegetarian meatloaf – it probably sounds gross but I swear it’s awesome. Morningstar beef crumbles + onions + breadcrumbs + a little bit of egg beaters, popped in the oven for 45 minutes and covered with ketchup for the last 5 minutes of baking. Super protein filled and delicious. Dessert was the amazing cupcake you see on the right. It was made by our wedding cake baker! I polished off a red velvet one. Gotta love the fondant Easter egg on top. Fondant is my fav!!!
