CSA Box #5

We’re on the fifth week of our CSA and we were super excited to see the contents of box number five. It’s like getting a Christmas present each week 🙂 Is it nerdy I get that excited about it? haha Anyhow here’s what we got and how we’re planning on using it:

  • Cabbage – we’re making stir fry soon and this will be perfect for it!
  • Cauliflower – salads for lunch and in stir fry.
  • Garlic scrapes – I chopped it up to add it to whatever we want.
  • Green onions – okay we have gotten a bazillion green onions for the past three weeks so these I think I’m going to chop up and freeze. We’re still working on the ones from last week.
  • Kale – I’m feeling some kale chips in the near future 🙂 YUM. Can’t wait to experiment with the flavors again!
  • Romaine and some other greens that I can’t identify – salad base!

CSA Box #4

Our fourth CSA box came yesterday. There were some pretty exciting vegetables inside (wow I feel nerdy saying that):

  • Romaine lettuce – will be used in salads for our lunches
  • Cauliflower – we’ll probably make a stir fry this week and incorporate this in it
  • Snap peas – snacks and stir fry
  • Zuccini – salad topping and stir fry
  • Beets – not sure what to do with this, I’m not even sure that I like beets… but I’ll have to give them a try now that we have them. I’ll be honest, the color is what really scares me.

Mystery Vegetable in CSA Shipment #3

Today was day two of the conference for work. Eats included granola with yogurt, half a bagel, an Irongirl bar (OMG, these are amazing by the way, and the website has a BOGO coupon!). Lunch was buffet style again so I had of small portions of a bunch of things – pasta salad, greens w. italian dressing, roll, cheese, vegetarian goulash over mashed red skinned potatoes, and ziti with alfredo sauce. The best part of the day were the Jelly Bellys they had out for snacks!

I got a little dixi cup with a scoop in it. Flavors included creamsicle, pear, banana, chocolate, cranberry, and the best of all was TOASTED MARSHMELLOW! yumm. Perfect for a little afternoon sugar pick-me-up!

Our 3rd CSA box came today. It included some new veggies:

  • Malabar Red Stemmed Spinach – we will use this for salads
  • Romain Lettuce – we will use this for salad too
  • Snap peas – good for snacks or maybe a stir fry?
  • Asparagus – not sure how we’re going to cook it this week, last week it was thrown into a stir fry.
  • Green onions – chopped up to add to salads, etc.
  • Garlic scrapes – it took me a while to figure out what this weird vegetable was. But google is a great resource.  I really have no idea what we’re going to do with the 2 garlic scrapes we got – any suggestions?

I’m off to finish making egg salad for my lunch tomorrow!

Everything in slow-mo

I feel like I’ve been in a haze all day yesterday and all day today. The hubby seems to think I’m low on iron since my supplements ran out last week and I’m procrastinating on refilling because of the cost. He may be right. I haven’t had the energy to do much around the house, much less exercise and I doubt this is still the result of a super crazy night on Sunday at the concert. So we’ll be heading to the health food store after work today to pick up my iron supplements.

I didn’t even have the energy to make up my egg salad for my sandwiches this week, so I’m going to have to get on that tonight. Lunches have been soup from the pantry and salad. Nothing exciting.

In other news, our second CSA box came yesterday.

The contents:

  • Romaine – cut up for salads
  • Green Onions – cut up for salads
  • Asparagus – we’re planning on marinating in EVOO, salt and pepper and baking it for a side sometime this week
  • Bok Choy – I really don’t know what to do with this (besides make chinese food or soup) – it’s too hot out for soup. Any suggestions?

Our first CSA

We got our first box from a local CSA on Tuesday. I have been super excited since we signed up because I thought it would be a great way to get more veggies into our diet. Our first box was full of lettuce, kale, spinach, green onions and radishes.

The first thing we did was chopped and cleaned and talked about how we’re going to fit these new veggies into our meals for the week.

– Lettuce and spinach went into a container to be used for salads to take in our lunches.
– Radishes were chopped up and will be added to salads.
– Green onions were chopped up and we’re planning on adding them to quesadillas we had planned for later in the week.
– The kale was something I really didn’t know what to do with. I’ve heard it tastes bitter so I knew it wasn’t a good salad or green monster green. So I decided what the heck, let’s try to make a batch of the kale chips I’ve been hearing so much about in the blogosphere. Somehow I managed not to burn them and they came out okay. I added sea salt and pepper to them and after tasting them I added cayenne powder to some and garlic powder to others just to try it. If we get any more kale I think I’ll definitely try to make kale chips again and experiment with different spices even more.

I have a big CSA salad packed for lunch, I’m super excited to try the fresh and locally grown veggies!
